Ryan's half day Friday...











Sweet Potato Leaves

  1. Cut sweet potatoes into 1/4" slices.
  2. Using cookie cutters, make leaves, pumpkins, and acorns. (We used mini-cookie cutters)
  3. Spread pieces onto baking sheet sprayed with vegetable oil.
  4. Lightly sprinkle 'cookies' with a mixture of cinnamon, sugar, and brown sugar.
  5. Bake at 375 degrees for about 20 minutes... until leaves begin to look slightly crispy.

I would love to make these with the kids..Daniel and I agree that we need to buy some cookie cutters asap. it's their gateway drug to squash(well, for the boys at least. Willow likes it already, and Ginger would sell her best friend for squash..)

It looks like you had a truly fun day - want to come hang out with us tonight? We are going to a fall festival.

They have enough of a 'french fry' quality that salt and pepper would be an excellent variation :)
